Honey Cookies

Total Prep Time: 35 minutes Makes : 10 servings
1 ½ cups of shortening
2 cups of light brown sugar
2 eggs
½ cup of honey
1 tsp. of lemon extract
4 ½ cups of flour
2 tsp. of baker’s style baking soda
2 tsp. of baker’s style baking powder
1 tsp. of salt
1 tsp. of powdered cinnamon
1. In a bowl, add in the shortening and light brown sugar. Beat with an
electric mixer until fluffy in consistency. Add in the eggs, honey and lemon
extract. Continue to beat until creamy in consistency.
2. Add in the flour, salt, powdered cinnamon, baking powder and soda.
Continue to mix until just mixed.
3. Shape into 12 rolls and slice into ¼ inch thick slices. Place onto baking
4. Place into the oven to bake for 10 to 15 minutes or until golden.
5. Remove and transfer onto a wire rack to cool completely before serving.
