Honey Lemon Cookies

Time: 1 ¼ hours Servings: 40
Ingredients:
3 cups flour
1 teaspoon baking soda
½ teaspoon salt
1 cup butter, softened
¾ cup white sugar
¼ cup honey
1 lemon, zested and juiced
1 egg
Directions:
1. Sift the flour, baking soda and salt in a bowl.
2. In a different bowl, mix the butter, sugar and honey and mix well.
3. Stir in the lemon zest and juice, as well as the egg.
4. Fold in the flour mixture then roll the dough into a thin sheet over a
floured working surface.
5. Cut the cookies with your favorite cookie cutters.
6. Place the cookies in the preheated oven at 350F for 10-15 minutes or
until golden brown on the edges.
7. Serve the cookies chilled.
