Jelly Bean Cookies

Total Prep Time: 25 minutes Makes: 32 servings
½ cup of shortening
¾ cup of white sugar
1 egg
2 Tbsp. of 2% milk
1 tsp. of pure vanilla
1 ½ cups of flour
1 ¼ tsp. of baker’s style baking powder
½ tsp. of salt
¾ cup of jelly beans
1. Heat up the oven to 30 degrees.
2. In a bowl, add in the shortening and white sugar. Beat well until evenly
mixed. Add in the egg, 2% milk and pure vanilla. Continue to beat until
creamy in consistency.
3. In a separate bowl, add in the flour, baking powder and salt. Stir to mix
and pour into the sugar mix. Stir well until just mixed.
4. Drop the dough by the tablespoon onto baking sheets lined with sheets of
parchment paper. Press the jelly beans into the dough.
5. Place into the oven to bake for 8 to 10 minutes or until the edges begin to
turn light brown.
6. Remove and set onto a wire rack to cool completely before serving.
