Lemon Blueberry Muffins

Time: 1 hour Servings: 12
2 cups flour
2 teaspoons baking powder
½ teaspoon salt
2 tablespoons chia seeds
½ cup white sugar
2 eggs
1 cup buttermilk
1 teaspoon vanilla extract
1 tablespoon lemon zest
1 cup fresh blueberries
1. Mix the flour, baking powder, salt, chia seeds and sugar in a bowl.
2. Add the rest of the ingredients and mix with a spatula.
3. Spoon the batter into 12 muffin cups lined with muffin papers.
4. Bake the muffins in the preheated oven at 350F for 20-25 minutes or
until well risen and golden brown.
5. Serve the muffins chilled.
