Mint & chocolate brownies

For the butter
1 cup sugar
1/2 cup butter
4 eggs
1 tsp vanilla
2 cups chocolate sauce
1/2 tsp salt
1 cup flour
For the mint layer
1/2 cup butter
2 1/2 cups powdered sugar
3 tbsp crème de menthe (or any other mint liquor)
For the glaze
1 cup dark chocolate
1/3 cup butter
1. Preheat the oven to 338° F. Grease and flour a square 20 x 20
cm baking dish.
2. Melt 1/2 cup butter in a saucepan. Add the sugar and stir until
completely blended. Let the mixture cool down for 5 minutes,
stir again, then add the eggs, vanilla, flour, salt and chocolate
3. Bake in preheated oven for about 20 – 25 minutes. Do not
overcook – the brownies should remain moist in the center.
4. In a bowl, mix 125 g of melted butter and powdered sugar until
smooth. Add the mint liqueur and stir. Spread over the cooled
brownies and allow to cool down completely.
5. Prepare the glaze: melt the dark chocolate and butter in a
saucepan. Stir until even and pour on top of the mint layer.
Allow to cool completely before cutting it into squares.
6. Decorate with mint leaves before serving.
