Oven-Roasted Grapefruit with Hazelnuts

Butter
Preheat the oven to 425°F.
Cut 2 Ruby Red grapefruits in half horizontally. Using a sharp
paring knife, loosen the grapefruit segments by first carefully
cutting between the fruit and the peel and then by cutting
along either side of each segment. Place cut-side up in an
ovenproof casserole dish. Divide 2 tablespoons of butter into
small bits and scatter among the cut sides of the grapefruit
along with 2 tablespoons of turbinado sugar or light brown
sugar.
Roast the grapefruit for about 30 minutes, or until the edges
begin to turn golden brown. Sprinkle the grapefruit with 4
tablespoons of roasted, skinned, and chopped hazelnuts and a
pinch of flaky sea salt. Drizzle any juices in the roasting pan
over the grapefruit, then serve.
TIP Cut a thin slice from the bottom of each half of grapefruit to create a flat, stable
surface before you bake them.
