Seed Energy Bars

Time: 40 minutes Servings: 20
1 cup oat flour
½ cup sunflower seeds
½ cup pumpkin seeds
½ cup cooked quinoa
¼ cup coconut oil, melted
1 cup pecans, chopped
¼ cup maple syrup
1 cup dates, pitted
1. Mix the dates, maple syrup and coconut oil in a food processor. Pulse
until smooth.
2. Add the rest of the ingredients and mix with a spatula.
3. Spoon the mixture in a small square pan lined with plastic wrap.
Refrigerate until set then cut into small squares.
4. Serve the bars fresh or store them in an airtight container.
