Shepherd’s Pie

1 lb. Ground beef
1 onion, grated or chopped
1 carrot, grated or diced
1 garlic, minced
1 teaspoon Italian seasoning
salt and pepper
1/4 Cup beef broth
1 tsp Worcestershire sauce
1 Tablespoon tomato paste
1 Tablespoon dry onion soup mix
Small bag mixed frozen vegetables- such as green beans or
peas and carrot mix
4 potatoes, cooked and mashed or instant mashed potatoes
about 2-3 Cups or replace with frozen hash brown cubes
cheddar cheese
1. Preheat oven to 180° C/350°F.
2. Line your muffin pans with liners or use silicone cups placed
on a cookie sheet. Cook onion, carrot and garlic in fry pan.
3. Add beef and cook until browned. Season with Italian
seasoning and salt and pepper. Add beef broth, Worcestershire
sauce, tomato paste and onion soup mix and stir until blended.
4. Stir in vegetables. Spoon mixture into muffin pans.
5. Top with mashed potatoes or diced hash brown potatoes. And
sprinkle with cheese. Bake for 15 minutes or until cheese is
melted and potatoes are toasted.
